Shrimp Scampi

Pasta and Shrimp are two of my favorite foods. Shrimp Scampi makes for a perfect easy dinner in our household. Kynsley loves pasta so this is one dinner  I don’t have to worry about her not eating (she is a very picky eater). I cut this recipe in half since there are only 2 real eaters in the household but I am posting the full for you larger families. Hope you enjoy 🙂

Ingredients:

  • 4T butter
  • 1/4 cup oil (I used Avocado)
  • 4 cloves of garlic minced or 1T minced garlic
  • 1 pound peeled shrimp
  • 1/4 lemon juice or white wine
  • 1/4t pepper
  • 1T oregano
  • 1/8 cup Parmesan cheese
  • 1/4 cup bread crumbs
  • 1/8 cup Parmesan cheese (for top)
  • Spaghetti or Angel Hair pasta(I used whole wheat spaghetti)

Instructions:

  1. Place pasta in boiling water
  2. While pasta cooks saute garlic with oil and butter until bubbles appear
  3. Add shrimp, lemon juice or wine, pepper, oregano
  4. cook until pink throughout
  5. Sprinkle with breadcrumbs and Parmesan cheese
  6. Toss shrimp and juices with pasta
  7. Sprinkle with Parmesan cheese
  8. Enjoy!

Whole Wheat Strawberry Banana Muffins

I know I know didn’t I just make whole wheat Strawberry muffins last night. Yes, yes I did; however, the significant other didn’t want chocolate chips in his. I figured I would make these using different ingredients and banana as well, since my freezer is starting to overflow with ripe bananas. These came out very moist but the ingredients used most wont have in their pantry and its a much smaller batch than my last ones. Anyways hope you enjoy!

Ingredients:

  • 1 1/4 cup Whole Wheat Flour
  • 2t baking powder
  • 1t cinnamon
  • 1/4t salt
  • 1T butter (I used coconut oil)
  • 1 egg
  • 2t vanilla extract
  • 1/4 cup yogurt (I used regular vanilla, greek is fine)
  • 2T honey
  • 1 medium banana
  • 1/2 cup Strawberries

Instructions:

  • Mix flour, baking powder, cinnamon and salt
  • In a separate bowl, mix butter (or coconut oil), egg, vanilla extract, yogurt and honey
  • Add banana to wet ingredients and mash
  • Add all wet ingredients to dry mix (do not over mix)
  • Fold in strawberries

Bake at 325 degrees for 15-20 minutes

Whole Wheat Strawberry Chocolate Chip Muffins

These are my ultimate go to muffins that make for a great quick breakfast on the go, or even a late night treat. I originally got these muffins from Skinny Taste, which you can find here http://www.skinnytaste.com/2011/04/whole-wheat-blueberry-muffins.html She used blueberries for her muffins, which I have also done but strawberries and chocolate chips is what I was craving!

Ingredients:

  • 2 cups whole wheat pastry flour
  • 1/2 cup raw sugar
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 2 tbsp butter (melted)
  • 1 cup unsweetened applesauce
  • 1 large egg, beaten
  • 1 tsp vanilla
  • 1 cup cut Strawberries
  • 1/4 cup mini chocolate chips

Instructions

  1. Mix Whole Wheat flour, sugar, baking soda and salt
  2. Mix melted butter, Applesauce, Beaten egg and vanilla in small bowl
  3. Add to Dry ingredients and mix well
  4. Fold in Strawberries and Chocolate chips

Bake at 325 degrees for 25 minutes. This works for both regular muffin pan or large muffins

Foil Packet Salmon and Veggies

Salmon is perfect for when you forgot to take something out the night before; throw it in some cold water and 10 minutes later its ready to cook. Now when I am feeling lazy I like as simple and easy as possible; but healthy as well. This meal can be made in foil for the oven no dirty dishes needed. Serve with some brown rice for another delicious side dish.

Ingredients: Salmon Pouch

  • Salmon Filet
  • Garlic Salt
  • Pepper
  • Lemon

Ingredients: Veggie Pouch

  • Cut up veggies (I used Broccoli and Zucchini)
  • Ranch Seasoning (As much as you like I went light)
  • Oil (I used Avocado Oil)

Instructions: Salmon

  1. Place Salmon on piece of foil
  2. Season with Garlic Salt and Pepper
  3. Place lemon slices on top (I used 2)
  4. Cover with another piece of foil and fold together like a pocket

Instructions: Veggies

  • Place cut veggies on piece of Foil
  • Season with Ranch seasoning
  • Place Lemon on top (I used 1 slice)
  • Drizzle with Oil
  • Cover with foil and fold together like a pocket

Bake both Salmon and Veggies at 375 degrees for 20 minutes.

Alfredo Shrimp Pasta Bake

You will never know this dish came straight out of your own oven. It taste as if you ordered it from a nice Italian restaurant. Although my family does not like the diced tomatoes, without them the flavor does not taste the same. I make them pick them out! You wont regret trying this.

Ingredients:

  • 1/2 Box Penne pasta (I use whole wheat)
  • 8 oz Shrimp
  • 1 T Butter
  • 1 Jar Alfredo Sauce (I use light)
  • 1 Can Diced Tomatoes (drained)
  • 1 cup Mozzarella cheese
  • 1/4 cup Parmesan
  • 1/2 cup Bread crumbs

Instructions:

  1. Cook pasta to al dente
  2. While pasta cooks Saute shrimp in pan with 1T butter
  3. Mix together Pasta, Shrimp, Mozzarella, Parmesan, Diced Tomatoes and Alfredo Sauce in large bowl
  4. Place in 8×8 baking dish
  5. Top with Breadcrumbs and

Bake at 350 degrees for 20-25 minutes.

Whole Wheat Pancakes

These whole wheat waffles are the best I have ever tried. Normally they come out chewy and I could never perfect it. I got this recipe off one of my favorite recipe websites www.100daysofrealfood.com all her recipes are made with whole foods and you will see my reviews on her recipes often. Check her website out.  I freeze the remaining and heat them up before work or days I do not feel like making breakfast!

Ingredients

  • 2 large eggs
  • 1 ¾ cups milk (I used 2%)
  • ¼ cup oil (she used melted butter I used melted coconut oil)
  • 1 tablespoon honey
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon baking soda
  • 1 ½ cups whole-wheat flour
  • 2 teaspoons baking powder
  • ⅛ teaspoon salt

Instructions:

  1. Pre heat waffle iron
  2. Mix Eggs, Milk, Oil  honey (The honey will be chunky thats ok), cinnamon and baking soda
  3. Add in whole wheat flour, baking powder and salt
  4. Mix until smooth
  5. Pour desired amount into center of waffle iron
  6. Cook for 3-5 minutes depending on size
  7. Enjoy

Grown up Grilled Cheese

Grilled cheese is the perfect quick and easy kid’s lunch so why not dress it up a bit so you and your kids can both enjoy it.

Ingredients:

  • 2 slices sourdough
  • 1T butter (I use spreadable non GMO)
  • 5 slices turkey deli meat
  • Half an avocado
  • 1 Slice turkey bacon (I use left over from breakfast)
  • 2 thin slices Cheddar cheese

Instructions:

  1. Heat turkey and 1 slice turkey bacon in a small frying pan
  2. Spread butter on 1 side of each piece of sourdough
  3. Remove turkey and bacon from pan, place 1 piece of sourdough buttered side down
  4. Add turkey, bacon, cheese and avocado
  5. Place 2nd piece of sourdough buttered side up
  6. Fry on both sides for 3-5 minutes on Medium heat
  7. Enjoy!
